Zucchini Apple Dabble Cake

Ingredients:

  • 1 1/2 c sugar
  • 1/2 c canola oil
  • 1/2 c apple sauce
  • 3 eggs
  • 2 tsp vanilla
  • 3 c flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 4 c peeled, seeded, chopped zucchini

Directions:

  • Mix ingredients in the order given.
  • Pour into a greased 9×13 pan.
  • Bake at 350°F for 30-40 minutes.
  • Topping – combine 1 c brown sugar, 1/4 c cream, 1/4 lb (1 stick) butter in a pot.
  • Boil for 4 minutes. Pour over cake when done baking.
  • Return to oven for 5 minutes.

Zucchini Lasagna

Ingredients:

  • 1 1/2 to 2 lbs dry ricotta cheese
  • 1 lb shredded provolone cheese
  • 1 c grated Romano cheese
  • 2 zucchini
  • 1/4 tsp granulated garlic
  • 1/4 tsp basil
  • 1 dash salt
  • 1 dash pepper
  • 2 eggs

Directions:

  • Slice zucchini into long pieces, like lasagna noodles.
  • Mix ricotta, provolone, and Romano cheeses well. Add garlic, basil, salt, and pepper. Add 2 eggs and mix well.
  • Layer in 9×13 glass baking dish as follows: sauce, zucchini, cheese, sauce, zucchini, cheese, sauce.
  • Bake at 350°F for 35-40 minutes.

Zucchini Appetizer

Ingredients:

  • 4 eggs slightly beaten
  • 1/2 c oil
  • 1/2 tsp salt
  • 1/2 tsp dry basil
  • 2 Tbs dry parsley
  • 1/2 c minced onion
  • 1 1/2 c baking mix, like Bisquick
  • 1/2 c grated Romano cheese
  • 3 c shredded zucchini

Directions:

  • Mix all ingredients well.
  • Bake in a 9×13 pan at 350°F for 25-35 minutes. Serve with marinara sauce.
  • If using fresh chopped, use 1 Tbs basil and 1/4 c parsley.

Zucchini Chocolate Cake

Ingredients:

  • 2 c flour
  • 1 c sugar
  • 1 1/2 tsp baking soda
  • 1/2 c cocoa powder
  • 1 tsp salt
  • 2 tsp vanilla
  • 1/2 c oil
  • 3 c shredded zucchini
  • 2 eggs
  • 1 c chocolate chips

Directions

  • Mix flour, sugar, baking soda, cocoa powder, and salt well in a bowl.
  • In a separate bowl, mix vanilla, oil, zucchini, and eggs well.
  • Combine bowls and mix well. Stir in chocolate chips.
  • Bake at 350°F in a greased 9×13 baking pan for 35 minutes.
  • Excellent served warm with vanilla ice cream.
